RECIPE:
Tex Mex Pot Pies
**Use 4 (12 oz) ramekins
Ingredients:
1 lb ground beef
1/2 cup white onion, diced
1/2 cup green bell pepper, chopped (optional)
1 teaspoon cumin
1/2 teaspoon salt
1 cup salsa
1 can (15 oz) corn, drained
1 box Jiffy corn muffin mix
1 egg
1/3 cup milk
1/3 cup Colby cheese, shredded (optional)
1/4 cup sour cream (optional)
Directions:
1.) Preheat oven to 400 degrees.
2.) In a large skillet, brown the ground beef with the onions. Stir in the cumin and salt.
3.) Add the salsa and corn to the skillet. Cook over medium heat for 5-10 minutes.
4.) Divide the beef mixture into the ramekins and level the tops.
5.) In a bowl combine the corn muffin mix, egg, milk, cheese, and sour cream. Stir until well combined. Pour the mixture over each ramekin and smooth to the edges.
6.) Bake uncovered for 20-25 minutes or until golden brown.
Enjoy with sour cream, cheese, or salsa!
