Ingredients:
120g digestive biscuits
4 tablespoons melted butter
450g cream cheese
70g sugar
1/2 teaspoon lemon zest
1/2 teaspoon vanilla extract
2 eggs
250ml water
8 teaspoons melted caramel sauce
100g mixed berries
Optional: mint leaves to garnish
1. Line the greased bottom and sides of a round baking pan with parchment paper
2. Add biscuits into a food processor and process into fine crumbs. Add the melted butter and process until combined
3.Transfer crumb mixture into the baking pan and press firmly into an even layer with slightly elevated edges.
Optional: place pan with crumb mixture into the freezer and let cool for 10 minutes.
4. Mix cream cheese and sugar into a large bowl, add lemon zest and vanilla extract and mix in one egg at a time.
5. Pour in cream cheese mixture into the baking pan with the crumb mixture. Level the top by gently tapping the pan against the counter to remove air bubbles
6. Fill inner pot of the All-in-One Cooker 3000 Series with 250ml of water. Insert the steaming plate and place the baking pan on to the steaming plate. Close and lock the lid.
7. Select manual pressure cooker and set the time to 20 minutes with a pressure of 30kPa. Press start!
8. Once the pressure is released, unlock and open the lid. Let the cake rest for 30 minutes before removing the cake from the pan. Place cake in the refrigerator and let cool for at least 4 hours or overnight.
9. Once cool, serve cheesecake with caramel sauce and garnish with berries!
