Ingredients
• Oil: 1/2 cup
• Brown Sugar : 1 cup
• Vanilla extract: 1 tsp
• Milk: ½ cup (adjust as needed)
• Cinnamon Powder( दालचीनी) : 1tsp
• Ginger Powder : 1/4 tsp
• Nutmeg ( जायफल) Powder : 1/4 tsp
• Whole wheat flour: 1 cup
• Baking powder: 1 tsp
• Baking soda: ½ tsp
• Carrots (grated): 1 cup
• Cranberries or walnuts ( optional )
Instructions
1. Preheat the Oven
Preheat your oven to 180°C (350°F). Grease and line a baking tin with parchment paper.
2. Mix the Wet Ingredients
In bowl, mix the oil, Brown sugar, vanilla extract and milk, until the sugar dissolves.
3. Prepare the Dry Ingredients
In a bowl, sift together whole wheat flour, baking powder, baking soda, cinnamon powder, nutmeg powder and ginger powder.
4. Combine
Add the grated carrots and chopped nuts/cranberries (if using) to the wet ingredients.
Gradually fold the dry ingredients into the wet mixture. Mix gently until combined. Avoid overmixing.
5. Bake
Pour the batter into the prepared baking tin and level the top. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
6. Cool and Serve
Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack. Slice and enjoy!
7. Garnish with cream cheese or whipped cream. Sprinkle some Cranberries or chopped roasted nuts.
