A traditional pesto sauce is made with Pinenuts, but there is not reason to stick strictly with traditional recipes. In this video, I make a pesto, but instead of using pinenuts, I use some toasted almonds. The almond pesto has a slightly different, nuttier flavor, which is great. But frankly, the biggest benefit for me is knowing that if all I have are almonds, I can still make a great pesto.
The pesto recipe is just about the same, and it will come together really quickly for you. It makes a great pasta sauce, but I'll use mine for a pizza sauce, for chicken, fish, or even steaks.
