Welcome to my Afghan Borani Banjan Recipe video.
Growing up, I had never imagined eggplant could be the star ingredient of any dish. Turns out it is the star of numerous dishes in Europe and the Middle East. After trying out a few of those dishes, I am not at all surprised why. Borani Banjan is a delicious eggplant dish hailing from Afghanistan. Borani Banjan is humble, simple and easy on the pocket. It was love at first bite for me! This tastes great with some flatbread or a portion of basmati rice! Try Borani Banjan now!
Ingredient (serves 3)
Oil to pan-fry
6-7 baby eggplants (peeled and sliced)
1 tablespoon chopped garlic
¼ teaspoon turmeric powder
½ cup finely chopped onions
2 cups finely chopped tomatoes
Dash of Black pepper
Salt to taste
Red chili powder as per taste
1 teaspoon of dried mint powder
1 cup yogurt or curd
1 pod of garlic (cooked or raw)
Chili oil for garnish
Cilantro for garnish (optional)
Method:
1. Peel and slice baby eggplants into discs. Pan-fry them in some oil on both sides until golden brown. Place them in a paper towel.
2. For the tomato sauce, heat some oil. Add some garlic. Let it cook until raw flavor goes away. Add turmeric powder. Cook for a few seconds. Add in the onions and cook them until translucent.
3. Now add in the tomatoes. Sprinkle some water if need be. Add salt to taste. Add a dash of black pepper powder and red chili powder as per taste. Cook the tomatoes until soft and mushy.
4. Let's make some dried mint powder. Spread out some fresh mint leaves on a microwaveable plate and microwave for 2 minutes. Crush the dried leaves by hand. There you have your dried mint powder!
5. Take a cup of lump-free curd or yogurt. Add salt to taste and a pod of garlic, raw or cooked. I prefer cooked. Add the dried mint leaf powder and mix well. Your yogurt sauce is ready.
6. It's time to assemble the dish. Spread out some tomato sauce. Drizzle some yogurt sauce. Arrange the eggplants slices. Layer with tomato and yogurt sauce. Garnish with chili oil and dried mint powder. Fresh cilantro is optional.
7. If you have no chili oil with you, no problem. Heat some oil/butter, turn off the heat, add some chili powder and drizzle it on top of the dish
