These easy chocolate braided brioche buns, also known as Babka Buns, are perfect for a Sunday brunch or big birthday celebration (in case you don't feel like cake 😉). A specialty of these buns are their "healthier" date-based chocolate filling. I've experimented with a lot of fillings over the past years and this is one of my absolute favourites.
The base is made with yeast which requires quite a bit of resting time. The result, however, is absolutely worth it, I promise. For the recipe you need,
Base dough:
* 500g wheat flour (regular)
* 1/2 block of fresh yeast (21g)
* 150g soy milk in room temperature (or other milk of choice)
* 30g coconut sugar
* 1 egg (+ 1 additional egg for the egg wash)
* 130g soft butter
* Dash of salt
Filling:
* 160g dates
* 50g Dark Chocolate
* 15g Raw Cacao
* 35 Crunchy Almond Butter
* 50sojamilch
* 1/2 Tsp salt
* 30g Hazelnuts (chopped)
Yield: 8 Babka buns
1. Combine milk, 1 Tsp of sugar and yeast in a bowl. Let it rest for 10 min.
2. Meanwhile beat the egg and butter until well combined. Add the remaining ingredients incl. the yeast-milk mix and beat the dough until well combined (15-20min of beating are ideal.)
3. Let the covered dough rest for at least 1h in a warm spot.
4. Roll out the dough as shown in the video, add the filling and form the swirl buns. Let them rest for another 30 min.
5. Add the egg wash, then add to the preheated oven.
3. Bake for 30 min Top-bottom heat. Take out after 20, add the hazelnuts and extra egg wash and place it back into the oven for another 10 min.
