Today, I made black risotto with prawns! I used squid ink to make the risotto black (obviously haha) and used lobster oil to poach the garnishes including the prawns, pearl onions and tomatoes.
The black risotto was finished with ricotta cheese and lemon instead of Parmigiano Reggiano, resulting in a lighter risotto. Because of that, it matched well with the delicate seafood :)
