I have fond memories of atsara in our town it's a free side dish when you buy Lechon Manok ( Charcoal Grilled Whole Chicken so delish). If Koreans have Kimchi then atsara or atchara is the Filipino equivalent. Green or unripe papaya is the star of this recipe and the combination of other ingredients works wonderfully. Atsara Recipe
1.5 to 2 lbs shredded green papaya
2 pcs carrots, flower cut, and julienne)
1-inch ginger, julienne
2 pcs garlic heads, slice thinly
1 mini red bell pepper, julienne
1 mini yellow bell pepper, julienne
1 mini orange bell peer, julienne
1/4 cup raisins (optional)
1/2 tsp whole peppercorns
1/4 cup of salt (for rubbing papaya)
250 grams or 1 1/4 cups white sugar
125 mL or 1/2 cup white vinegar
125 mL or 1/2 cup apple cider vinegar
Don't stress about the bell pepper colors use what's available.
Think about a 1:1 ratio for the pickling solution if you use 500 ml of total vinegar use 500 grams of sugar. I find that the flavors are balanced when I use this ratio.
