FOR THE MUFFINS
3 cups plain/all-purpose flour, 375g
3/4 cup caster/granulated sugar, 150g
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 large egg
1 cup buttermilk, 240ml
1/2 cup vegetable oil, 120ml
1 teaspoon vanilla extract
3 small apples, peeled and chopped into small chunks

FOR THE STREUSEL
1/2 cup plain/all-purpose flour, 62g
1/4 cup light brown sugar, 50g
1/2 teaspoon ground cinnamon
2 tablespoons unsalted butter, 28g, melted
