📋 Ingredients:
For Dough:
All-purpose flour - 260g
Warm milk - 95g
Eggs - 70g
Oil - 25g
Sugar - 30g
Yeast - 4g
Salt - 1/2 tsp

👩🍳 Instructions:
1) In the warm milk, add sugar and active dry yeast. Whisk together and let it sit for about 5 minutes until the yeast looks foamy. If you are using instant yeast, you can skip this step and mix it right into other ingredients.
2) Combine all of the ingredients in the bowl of your mixer.
3) Knead the dough with the hook attachment in a stand mixer for 3 minutes on low speed (1 & 2) or knead by hand until smooth, about 5-10 minutes.
4) First Proof: Place dough in a lightly oiled bowl, cover it with plastic wrap and let it rise for about 1-1.5 hour in a warm place or until doubled in size.
5) Divide the red bean paste into 8 balls (45g each). Cover and refrigerate the red bean balls.
6) Once the dough rises, punch down the dough to remove gas. Turn it out onto a lightly floured surface and cut it into 8 pieces.
7) Tuck in the edges towards the center and roll each piece into a ball and place them onto a parchment-lined baking sheet.
8) Second Proof: Spray oil on the plastic wrap and cover the dough so it doesn't stick to the plastic wrap. Let it rise for 30 minutes in a warm place or until doubled in size.
9) Flatten into a round disc with center thicker than the edge.
10) Bring the sides of the dough towards the center and pinch to seal.
11) Flatten the bun slightly and press down the center to make a hole.
12 ) Final Proof: Place on a parchment-lined baking sheet and cover loosely with greased plastic wrap. Let them rise for 30 minutes in a warm place or until doubled in size.
13) Brush tops of red bean bread with egg wash and add toppings.
14) Preheat the oven to 350°F (177°C). Bake until golden brown on top, about 15 minutes.
15) Set aside to cool to room temperature before serving delicious sweet red bean bread.
