For white sheet cake:
Milk - 1/2 cup
Egg whites - 3
Vanilla extract - 1/2 tsp
Cake flour - 1 cup + 2 tbsp
Sugar - 3/4 cup + 2 tbsp
Baking powder - 2 tsp
Salt - 1/2 tsp
Butter(softened) - 6 tbsp(cut into pieces)
Malted chocolate buttercream:
Sugar - 1/4 cup
Egg white - 1 1/2
Butter(softened) - 6 tbsp(cut into pieces)
Semi sweet chocolate - 4 oz
Malted milk powder - 2 tbsp
1. Preheat the oven to 350°F(180°C).Grease 9 x 9 inch square baking pan. Line the bottom of the pan with parchment paper.
2. Whisk egg whites,milk and vanilla extract together.
3. In a mixing bowl, combine cake flour,sugar, baking powder and salt.
4. Add butter 1 pieces at a time. Mix until pea size pieces remain.
5. Add half of the milk mixture . Beat on meduim high speed until light and fluffy .
6. Add remaining milk mixture. Beat until incorporated.
7. Pour the batter to prepared pan and smooth the top with rubber spatula.
8. Bake for 20 to 25 minutes, until toothpick inserted in center comes out clean.
9. Let it cool completely.
10. Prepare Frosting:
1. Combine sugar, egg whites and salt.
2. Place over a saucepan of simmering water
3. Whisk constantly, about 4 minutes.
4. Remove from the pan and beat the warm egg mixture on medium speed until it has consistency of shaving cream.
5. Allow to cool for 3 minutes.
6. Add butter 1 piece at a time, whip until smooth and creamy(about 2 minutes).
7. Add melted chocolate, malted milk powder and vanilla extract. beat until light and fluffy(about 30 second).
8.If frosting seems to soft, chill it in refrigerator. Then rewhip until creamy.
11. Spread frosting evenly over top of cake.
