Knowing how to select fresh from a grocery is very important. Here are a few tips to make choosing fresh fish a little easier. Try to buy fish from a store with a fishmonger or seafood specialist, they can answer any questions that you might have about the fish and provide services to help you clean the fish. Use your senses when buying. Start by smelling the fish, it should smell fresh and should not have a strong fish smell. Next touch the fish, the flesh should be firm and bounce back. If it leaves an indent when you poke it, it might be a little old. Last, look at the eyes, skin and gills. The eyes should be clear and raised, the skin should be moist and shiny and the gills should look bright red. If the eyes are sunken and cloudy, the skin is dry and dull or the gills are very dark or missing, then the fish may be old. Fish can stay fresh in the fridge for up to 2 days and frozen fish can last up to 3 months.
