This traditional Mexican stew called green pozole, or pozole verde, is packed with fresh flavors from lime, tomatillos, and green chili peppers. It is the perfect warm and hearty soup to make on a cold day, as the spice adds an extra layer of warmth!
This recipe uses traditional hominy but you can use other grains or beans such as chickpeas. It is essentially made with a salsa verde and chicken broth base, so this soup is intensely flavorful, healthy, and could not be easier to make. If you don’t think this is the warmest, most comforting soup ever, we don’t know what is.
Ingredients
1 28oz. can Tomatillos, with ½ the liquid
1 White Onion, diced (reserve some for garnish)
2 Serrano Peppers (deseed for less spicy), cut into pieces
1 Small Bunch Cilantro, leaves and stems
4 cloves Garlic
1 tsp Mexican Oregano
1/2 tsp Salt
2 14oz can White Hominy, drained and well-rinsed
6 cups Chicken Stock
1 Rotisserie Chicken, meat picked and shredded (3 cups)
Tortilla Chips, for serving
2 Avocados, sliced
½ small head Iceberg lettuce, shredded
2-3 Radishes, thinly sliced
2 Limes, sliced into quarters
Mexican Crema (or sour cream), to taste
