The Pyrenees form a natural mountain border between France and Spain, and the remote valleys are home to some of the last strongholds of traditional ewe’s milk cheese in Western Europe.
Will and his daughter travel to the beautiful Iraty Valley in the Basque to meet Peio Etxeleku of Agour dairy to learn about the many challenges facing the local Ossau–Iraty cheese. They then head to the French Midi-Pyrenees to catch up with affineur Dominque Bouchait and visit a shepherd who milks 200 ewes a day by hand.
