Why so serious? I don’t like waiting for beef stew! It’s a bit like torture because the house smells so good, but you can’t eat just yet! Fortunately I made this in our handy dandy Instant Pot and it didn’t take that long for me to smile again. Yummy! Ingredients included: olive oil, beef shank (osso buco), onion, garlic, kosher salt, black pepper, paprika, chili powder, bay leaf, cinnamon stick, tomato paste, Portuguese chouriço, mushrooms, carrots, red pepper, white wine and beer. Cooked in the instant pot for 75 minutes. Left it in slow release mode for about 10 minutes and then released the pressure.
