Lemon squash (cordial) recipe -
Halve and slice 6 lemons.
Add 2 tspns citric acid, 5 cups white sugar, and 5 cups boiling water.
Stir well until sugar dissolves. Soak for 36 hours, stirring from time to time, then strain and bottle. To drink, dilute to taste with chilled sparkling water.
Melt + Mix Fudge recipe -
Combine 2 x 300g packs of chocolate melts, a 400 g can condensed milk, and 60 g chopped butter.
Melt in the microwave on medium for 4-5 minutes, stirring 2 or 3 times.
Add nuts and fruits*, mixing well.
Spread in a baking paper lined tray and smooth out.
Chill till firm, then cut into squares or fingers to serve.
*I used cranberries and slivered almonds.
Semi-dried lemon -
Line baking trays with foil, then with baking paper. Arrange reserved lemon slices from making lemon drink, well drained. Place in a preheated oven set at 75-100 degrees C and leave for 1 hour, turning the slices halfway through. Cool on a cake rack, then place in a serving bowl. This makes a very refreshing chewy snack; I just leave the bowl out so we can help ourselves!
