A brine is all about what you and your family like, so you cannot go wrong with a brine.

Here's what I used:
*2 8 - 24 lb cooking bag
1 Gallon Apple Cider
1/2 Gallon Orange Juice (NO PULP)
1 Cup of Koser Salt (you can use 1.5 - 2 cups - your choice)
3 Apples
3 Oranges
3 Lemons
3 Onions
2 pears
Tablespoon of Pepper
*NOTE: A BRINE BAG IS PREFERRED instead of cooking bags
DIRECTIONS:
Leave the peel and rind on all fruits and veggies with the exception of the skin of the onion. Please remove that.
1. Place turkey in the bag
2. Pour orange juice and apple cider in bag reserving about a third of
the apple cider to add the salt
3. Add the Salt to remaining cider & shake it up very well
4. Pour salted cider into the bag
5. Double tie the bag and place into the refrigerator for 24 - 48 hours (but this time depends on you.
At the very minimum leave the brine in the refrigerator for 12 hours).
6. Once you take the turkey out of the fridge after sitting in the brine, pour everything out and
thoroughly rinse the turkey
7. Season the turkey per your taste
8. Place the turkey in the oven & roast according to the instructions on your turkey bag
