The Malay term Apam Balik literally means “turnover pancake” in English. It is cooked pancakes coated with flavorful toppings such as ground peanuts, sugar, butter, and sweet corn and then folded in half. It’s a popular street food in Malaysia, Singapore, and Indonesia.
INGREDIENTS
Portion: Four 8” round pancakes
BATTER
1 cup (120 g) all-purpose flour
1/2 cup (60 g) rice flour
1 tsp active dry yeast
1/2 tsp salt
2 tbsp granulated sugar
3/4 cup (180 ml) water
2 eggs
2 tsp vegetable oil
1/2 tsp baking soda
1 tsp vinegar
TOPPINGS
1 cup roasted peanuts
2 tbsp granulated sugar
2 tbsp butter
1/2 cup Cream style corn
