SRILANKAN STYLE FRESH SPRATS STIRY FRY ● FISH MASAL RECIPE ● HOW TO FRY SPRATS

Sprat is a such a delicate fish with lots of flavour and when cooked right you wouldn't even notice the bone
Ingredients:
500g gutted sprats
Marinate:
1/4 tsp turmeric
1 tsp chilli
1 tbsp corn flour
4 tbsp oil
2 medium onions sliced
1 cup sliced tomatoes
1 tsp mustard seeds
2 tbsp curry leaves
1 tsp ginger paste
1 tsp garlic paste
1/2 tsp turmeric
1 tsp chilli
1 tsp cumin
4 green chillies
1/2 tsp salt
Method
1. Marinate fish and fry 7 mins each side or until firm
2. Remove sprats from pan once fried, add onions and fry till golden brown
3. fry mustard seeds and curry leaves then add tomatoes and green chilli
4. cook few mins until tomatoes are slightly cooked but not mashed
5. Add the fried fish and give a gentle stir
6. Add salt to taste and 1/4 lime juice at the end
As its fried to perfection the bones will become so crunch and you wouldn't even notice.
Best with boiled rice just like we eat in Sri Lanka.
