Fish baked in sea salt shell, a wonderful recipe to bake fish and be in an Immaculate beauty, juicy, moist, well seasoned, with mouthwatering taste, as the fish retains all its flavors, perfect shape and moisture within the salt crust it’s baking in.
You can have any medium to large size fish in this recipe and the results are such as a top class restaurant, with hardly any efforts.
For our recipe we need these ingredients:
2 medium to large size fish; Bream and red snapper
2 kg of sea salt
10 garlic cloves
1 spoon of salt
1 large lemon, cut in medium size pieces/cubes
30 ml of olive oil
Into a large baking tray, with high edges, we place parchment paper, then we place our fish onto it, stuffing its belly with the desired amount of garlic cloves and lemon pieces, then we sprinkle with salt, and drizzle with oil, then we wrap the parchment around the fish and close it as an envelop, turning the edges on itself, to be totally tight sealed.
We repeat the same for the second fish, as we need to encase each fish alone.
Into a large pot we add the salt and add to it water, till we reach a wets and texture feeling, then we take the salt and mold it all around the fish, from all angles and sides.
Then into a preheated oven, we slow bake the fish at 150c for 1 hour and 15 minutes, then with a sharp edge knife, we drive the knife into the salt shell all the way into the fish and we pull it out, then we put the knife onto our tongue, and if we feel the heat, then this means the fish inside is, hot, and is cooking/cooked, we then close the heat, and we leave the fish in the oven for another 30 minutes.
Once the fish has baked, we take out the tray, and with a sharp and large knife, we break open the sea salt shell and we take the parchment envelope and we place onto a clean plate, then we open it and we remove the fish and we serve it, not forgetting to use all the juice inside and pour it onto the fish.
