Arroz de Cabidela is one of the oldest dishes in Portuguese cuisine. Typical in the North of Portugal, although you can find it in traditional restaurants throughout the country.
This dish is extremely simple, but let me tell you…it is amazingly good & tasty!
Smooth, rich, and flavorful.
The broth and high quality chicken is really what makes this dish shine.
Try to get yellow chicken from a local farmer.
👉🏼 INGREDIENTS:
• 1.5 kg of whole chicken cut into pieces
• 400 g of “carolino” rice (rice with smaller grains), washed
• 180 ml of chicken blood
• 1 large chopped onion
• 4 minced garlic cloves
• 2 bay leaves
• 200 ml of white wine
• 5 tablespoons of white wine vinegar
• 2 liters of hot water
• some olive oil
• some salt
• some piri piri
• chopped parsley
cooking time : about 40 - 50 minutes / plus 10 minutes with the rice.
