Fall is here and there is no better time to make soup. Start with this easy Lentil and Sausage Soup. It comes together in just over an hour from start to finish.
Ingredients:
1 onion, chopped
3 carrots, diced
2 ribs of celery, diced
3 cloves garlic, chopped
1 lb sausage, sliced
1 lb of lentils, washed
3-4 red potatoes, diced (equal to about 3 cups)
1 tsp Salt
Bay leaf
8-10 cups of water
Cook onion, carrots, celery and garlic until softened, about 10 minutes. Add sausage and cook 5 minutes. Add lentils, potatoes and bay leaf. Pour in water. Cook 30 minutes or until lentils and potatoes are tender. Add in more salt if needed. I ended up using 10 cups of water. How much water you will need will depend on how much water the lentils absorb and how thick you like your soup. Serve in a warmed bowl. Add grated parmigiano reggiano or pecorino romano if desired.
