***PININYAHANG MANOK (CHICKEN PINEAPPLE)***
Ingredients [Serves 4 persons]:
1/2 kg chicken thigh and leg parts
4 cloves garlic (chopped)
1 cup soy sauce
1 cup pineapple chunks
1 cup pineapple juice
1 cup brown sugar
pepper
vegetable oil
Procedure (Approximately 30 minutes cooking):
1. In a bowl, mix together chicken meat with garlic, soy sauce, pineapple juice. Mix well and add pepper.
2. Marinate for at least 20 minutes. Keep the marinade sauce.
3. Fry chicken for 5 to 8 minutes on each side in medium heat pan. Set aside.
4. In a separate pan, mix together fried chicken and marinade sauce. Simmer for 10 to 15 minutes to cook the chicken well.
5. Add pineapple chunks. Simmer for few more minutes.
6. Transfer on a plate, serve and enjoy.
Tips:
1. Marinate thin pieces of chicken from 20 minutes to 3 hours while whole chickens for up to 24 hours.
2. Chicken pineapple is best served with white rice and a side of veggies.
