Sea bass or Siakap (Asian sea bass) Barramundi
Salt, turmeric and corn starch
Fry until brown and crispy
In a pan add
3 tbsp cooking oil
6-8 pcs chopped garlic
1 large diced red onion
Sauté
2 lime leaves
7g sliced ginger
100g sweet chilli sauce
2 tbsp dark soya
1 tbsp oyster sauce
1 tbsp fish sauce
Corn starch slurry 100ml
3-5 Red/green chilli’s (depending on spice tolerance)
Fresh chopped coriander
Squeeze 1 1/2 lime
Pour over fish, garnish with spring onion, chilli and fresh coriander.
