VEGAN NYONYA ACAR
Vegetables:
200g cucumber
200g carrot
100g French beans
100g cauliflower
100g pineapple, cut into small pieces
Blended ingredients:
10-15 dried chilli
4 cloves garlic
5 shallots
1 lemongrass, white parts only (chopped)
80ml water
Seasoning:
2 tbsp brown sugar
1 1/2 tbsp white vinegar
2 tbsp tamarind paste (add with 3 tbsp water and mix well)
1/2 tsp salt
2-3 tbsp oil
Other toppings:
100g roasted peanuts, crushed
3 tbsp toasted white sesame seeds
Method:
1.) Wash and cut the cucumber into long strip. (Remove the seeds).
2.) in
3.) Soak the dried chili with boiling water till soft.
Add the lemongrass, garlic, shallots, soaked dried chilies and water into the blender, blend till smooth paste. Set aside
4.) Cut the French beans, carrot and cauliflower into small pieces or long strip. Boil a pot of water, then briefly blanch the vegetable. Drain and set aside.
5.) Heat 2-3 tbsp oil, add in the blended chilli paste. Sauté with low heat for 2 minutes. Add in all the seasoning ingredients, cook with low heat till the water is evaporated.
6.) Lastly add in the blanched vegetable, pineapple, crushed peanuts. Stir to mix well till all combine.
7.) Transfer to the serving plate and sprinkle with more crushed peanuts and toasted sesame seeds.
8.) keep the pickled in refrigerator for up to 1 week.
