1. HOMEMADE MARGHERITA PIZZA (0:04)
INGREDIENTS
2 tbsp olive oil , divided
2 tsp chopped garlic
2 cups canned whole Italian tomatoes , with juices
4 naan
2 cups shredded mozzarella
1/4 tsp basil leaf
DIRECTIONS
- Preheat oven to 400F.
- Heat 1 tbsp oil in a pot over medium. Add garlic and sauté for 30 sec or until fragrant. With a clean pair of kitchen scissors, cut whole tomatoes inside the can, then add to pot with juices. Add a pinch of sugar and gently simmer on medium-low for 15 min or until thick. Season with salt.
- Brush remaining 1 tbsp oil onto baking sheet. Place naan on sheet. Top each with a dollop of sauce and sprinkle with shredded cheese. Bake 20 minutes or until cheese is melted. Top with basil.
2. CALZONES WITH TURKEY KIELBASA
INGREDIENTS
4 tsp olive oil , divided
1 onion , finely chopped
1 garlic clove , minced
1 1/2 227-g pkg sliced mushrooms , about 5 cups
4 plum tomatoes , thinly sliced
2 tbsp tomato paste
1 batch Perfect Pizza Dough , or 500 g store-bought pizza dough
2 cups grated mozzarella
1/2 300-g pkg turkey kielbasa , thinly sliced or finely chopped
2 tbsp cold water
DIRECTIONS
- Position rack in bottom third of oven. Preheat to 500F. Line a large baking sheet with parchment.
- Heat a large frying pan over high. Add 2 tsp oil, then onion and garlic. Cook, stirring often, until onion starts to soften, 1 to 2 min. Add mushrooms, tomatoes and tomato paste. Cook, stirring often, until most of the liquid has evaporated, 8 to 10 min. Remove from heat.
- Place pizza dough on a lightly floured surface. Cut into 6 pieces. Pat each piece into a flattened round. Using a floured rolling pin, roll each piece into a 6-in. circle. Dividing mushroom filling into 6 portions, scoop each one onto lower half of each circle, leaving a 1-in. border. Top with cheese and kielbasa. Brush dough edges with cold water. Fold top over filling. Firmly press edges of dough together to seal. Twist edges or press with a fork.
- Place calzones on prepared baking sheet and brush lightly with remaining 2 tsp oil.
- Bake in bottom third of oven until golden, 10 to 12 min.
3. GREAT WHITE (SAUCE) PIZZA/PIZZA BIANCA (4:16)
INGREDIENTS
1 cup milk
2 garlic cloves
2 tbsp butter
2 tbsp all-purpose flour
1/3 cup grated Parmesan
1 cup shredded mozzarella
1 12-in. unbaked pizza crust
DIRECTIONS
- Preheat the oven to 425ºF (220ºC).
- First – pour the milk into a blender. Add the garlic and blend until smooth. Set aside.
- In a small saucepan, over low heat, melt the butter. Add the flour and cook, stirring, for just a minute or two, until foamy. Now, add the milk mixture, stirring (or whisking) constantly, until it is no longer lumpy. Bring to a simmer over medium heat, then cook, stirring, until the sauce is smooth and thickened – about 5 minutes. Remove from heat and stir in the Parmesan cheese. OK, now you have the sauce. Let it cool slightly.
- Spread the sauce evenly over the surface of the pizza crust – almost but not quite to the edges. Sprinkle with the mozzarella cheese. Bake for 20 to 25 minutes, or until the crust is lightly browned underneath and the topping is bubbly and beginning to brown.
- Great Green Variation: Stir ½ cup (125 mL) well-drained, chopped, cooked spinach into the white sauce. Substitute crumbled feta cheese for the mozzarella. Bake as above.
