CHICKEN KOSHA MASALA
Chicken marination Ingredients:
Chicken 750 gm
Ginger garlic 2 tbsp
Thick yogurt 3 tbsp
Mayonnaise 3 tbsp
Turmeric ¼ tsp
Salt ½ tsp
Lemon juice 2 tbsp
Oil to shallow fry
Soy sauce 1 tbsp
Green chili sauce 1 tbsp
Ingredients to Make Paste
tomatoes 3
cashew nuts 12
Roasted poppy seeds 2 tbsp
Roasted peanuts 1 tbsp
Chopped coriander ½ cup
Green chilies 4 small
Water ¼ cup to make smooth paste
Ingredients for Curry
Oil ½ cup
Onion finely chopped 1 ½ cup
Ginger garlic paste 1 ½ tsp
Chili powder 1 ½ tsp
Coriander powder 1 ½ tsp
Allspice 1 tsp
Chicken powder ½ tsp
Salt ½ tsp
Water ¼ cup
Butter 1 ounce
Chopped coriander for garnishing
Sambal oelek 1 tbsp
METHOD
Chicken pieces marinate with marination ingredients and keep it for 30 mins. Heat oil in a pan, and shallow fry chicken pieces. In a blender, blend together tomatoes, coriander, cashew, peanuts, poppy seeds, green chilies into a thick smooth paste. Heat oil in a pan to make curry, add chopped onion, fry till golden, add ginger garlic paste and Sambal oelek then fry for a min, add the prepared tomato paste, fry for 2 more mins, add all the spices, salt and water, fry till oil comes on top, add in fried chicken, mix well, stir fry for another 2-3 mins. Finally sprinkle coriander leaves, cover and simmer on low flame for 10 mins, serve hot with nan.

MINCE CHEESE CUTLETS
Ingredients
Potatoes (boiled and mashed) ½ kg
Butter 3 ounces
Garlic 1 tsp
Onion finely chopped 1 cup
Spring onion finely chopped ½ cup
Boiled peas ½ cup
Green chilies Sauce 1 tsp
Salt 1 tsp
Black pepper 1 tsp
Chicken powder 1 tsp
Cream cheese 1 tbsp
Mince ½ kg
Soy sauce 1 tbsp
Ingredients for Marination
Ginger garlic paste 1 tbsp
Green chili sauce 1 tsp
Turmeric ¼ tsp
Chili powder 1 tsp
Roasted ground coriander 1 tbsp
Ground roasted cumin 1 tsp
Allspice 1 tsp
Chicken powder 1 tsp
Salt 1 tsp
Hung curd 2 tbsp
Cream 3 tbsp
Oil ¼ cup
To Make Cutlets
Cheese slices or cubes as required
Ingredients to Coat
Dry flour as required
Beaten eggs as required
Bread crumbs as required
Oil for deep fry
METHOD
First prepare potato mixture. Heat butter in a pan, fry garlic and onion, once onion is transparent, add in boiled peas, green chilies and spring onion, cook for 1 min, add this mixture in mashed potatoes with salt and black pepper, and cream cheese, mix well and keep aside. Apply marination to mince, keep it for an hour. Heat oil in a pan, fry mince on high flame till water dries, cool, add this to the potato mixture, adjust seasonings, mash the mixture well with hand, shape into a flat round on palm, place ½ cheese slice in center, roll back into a ball, gently press to flatten into a cutlet shape, coat each cutlets in dry flour, then in beaten egg, finally coat in bread crumbs, deep fry.
