There aren't enough carols in 7/8 (and that's a fact.)
There also aren't enough carols to choose from when it comes to the reading from Isaiah about "the people who walked in darkness..."
Award-winning British Alexander L'Estrange has solved both of these problems with his carol 'Isaiah's Prophecy' (with words by Joanna Forbes L'Estrange.) It's fun to sing, quirky, not too challenging and has a short a cappella section in the middle which demonstrates that a 3-part vocal texture lacks nothing.
