A mini crock pot is a good alternative when cooking for one. Here's an easy beef stew using a mini crock pot.
RECIPE FOLLOWS
Beef Stew For One or Two
6 ounces of cooked beef (or raw, cubed small, seasoned with salt and pepper and browned in 1 tablespoon of olive oil)
6 ounces peeled, cubed potato
1/2 cup sliced carrot
1/3 cup diced onion
1/3 cup frozen peas
1 celery stalk, chopped
1 15 ounce can beef broth
2 tablespoons ketchup
1 bay leaf
( add a sprig of fresh thyme, or a little rosemary, if desired)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon each onion and garlic powder
2 teaspoons Worcestershire sauce
1 teaspoon brown sugar
Directions: combine all solid ingredients in crock pot. Cover with seasonings. Add all liquid ingredients. Cook on high for three hours, stirring occasionally and TASTE for seasoning. To thicken broth, combine 2 tablespoons flour with 1/4 cup of cold water and blend well with fork to make a smooth slurry. Add to stew and stir gently to combine. Cook for additional 15 to 30 minutes, or until gravy is thick and bubbly. Makes two generous dinner servings.
