Perfect summer dish: Korean spicy chewy noodles (jjolmyeon)
Hi, everyone. It has been very hot here where I live. This dish is perfect for a hot summer day. It’s refreshing, delicious and healthy. The sauce and fresh vegetables are what makes this dish special. Pureed fruits and a little bit of soda make this sauce so delicious. Hope you enjoy this dish!
4 oz purple cabbage: shredded
4 oz green cabbage: shredded
7 lettuce leaves: sliced thinly
1/4 red onion: sliced thinly
7 Perilla leaves: sliced thinly
1/2 Korean pear: sliced thinly
4 oz carrots: shredded
1/2 English cucumber: sliced thinly
2 eggs: boiled
12 oz soy bean sprouts, boiled
Jjolmyeon, Korean chewy noodles
Sauce:
1/2 Korean pear, cut them in big chunks
1/2 apple, cut them in big chunks
1/4 cup pineapple
1/4 cup lemon soda: Spindrift
4 garlic cloves
1 1/2 tbsp Korean chili paste, gochujang
4 tbsp Korean chili flakes, gochugaru
2 tbsp low sodium soy sauce
3 tbsp white vinegar
3 tbsp honey or sugar
2 tbsp sesame oil
1 tbsp crushed sesame seeds
1 tsp sea salt
Garnish:
1 tbsp pine nuts
White Sesame seeds
Black sesame seeds
*Follow the package instruction for cooking the noodles.
