Originating from France, the king cake is a sweet tradition celebrated each year for Epiphany, marking the conclusion of the Christmas festivities. Associated with this time, it embodies sharing, conviviality, and the hope for a prosperous year ahead.
Frangipane, this luscious blend of almonds and cream, forms the heart of this treat. In this video, I'll unveil the secrets and tips to achieve a perfectly golden king cake, crispy on the outside and lusciously soft within.
🥮☕️ French King cake with frangipane 👑
🥮☕️ King cake with homemade frangipane (almond cream), 👑 quick and easy to make, a traditional recipe. This cake is traditionally shared on Epiphany Day, January 6.
This King cake, otherwise called The Twelfth Cake, Twelfth-night cake ou Twelfth-tide cake, is really a very delicious one. The man finding the bean or the figurine hidden in the cake becomes the King of the day while the woman finfing the bean becomes the Quin of the day, known as the Lord or Lady of Misrule.
There is as well a paper crown to crown the King or the Qqueen who finds the fève. The youngest person goes under the table and names the recipient of each piece as they are cut. The one who finds yje hidden figurine gets the crown.
Ingredients :
- 500 g of homemade or store-bought puff pastry, divided into two parts
- 90 g of softened butter
- 90 g of sugar
- 1 sachet of vanilla sugar
- 1 egg
- 120 g of ground almonds
- 1 tablespoon of rum
- 1 egg yolk to brown the cake
Preperation :
1. Preheat the oven to 200°C (392°F) .
2. Start by preparing the frangipane. To do this, mix the butter, sugar and vanilla sugar. Add the egg and whip the preparation, gradually incorporating the almond powder, then the rum. The frangipane is ready.
3. Place the first part of the dough rolled out in a round on a baking sheet covered with parchment paper and distribute the frangipane on the dough, leaving an area of one cm from the edge without frangipane, and place the bean (neither in the center, nor near from the edge).
4. Moisten the frangipane-free edge with a brush without overflowing outwards.
5. Cover everything with the second part of the dough, sealing the edges with your fingers. Then seal the edges of the dough with a fork to decorate them.
6. Brush the cake with egg yolk, draw patterns with a knife blade and make a small hole in the center of the cake with a knife to create a chimney.
7. Bake the cake at 200°C (392°F) for 10 minutes, then lower the temperature to 180°C (356°F) cook it for 15 minutes.
8. Take the patty out of the oven and let it cool before serving.
📒 TIPS 🔰 Good to know 🤗:
☑️ You can replace the rum with a few drops of bitter almond extract.
☑️ To prevent the dough from shrinking during baking, let the patty rest in the refrigerator for about 20 to 30 minutes before placing it in the oven.
