An easy Kerala style egg curry which goes very well with appam, chappati etc.
1 onion sliced thin
1 small ginger piece- sliced
3-4 garlic cloves- sliced
2 green chillies- slit
4 hard boiled eggs
few curry leaves
a little/pinch of salt- so that the onions wilt quickly
1/4 tsp turmeric powder
1 tsp kashmiri chilli powder
2 tsp coriander powder
3/4 cup hot water
salt as per your taste
1 cup thick coconut milk
For the seasoning
3 shallots
1 tsp coconut oil
1/2 tsp mustard seeds
few curry leaves
1/4 tsp fennel seed powder
*Don't skip the fennel powder as this ingredient gives a lovely taste to the dish
