You must cook them at the highest temperature in the oven or fry them in a pan on the stove. Either way you choose, they will turn out great! They are very soft, tender and delicious.

Ingredients for 6 pieces:
500 g ( 4 cups ) all-purpose flour ( + extra flour for kneading ~ 2-3 tbsp )
300 ml (1+ 1/4 cups ) warm water (not hot or boiling)
1 tbsp dry yeast ( 7 g ) or 20 g fresh yeast
1 tsp salt
1 tsp sugar
3 tbsp olive oil
Put the yeast , sugar and 1 tbsp flour in the water and mix. Let it sit for about five minutes, for the yeast to get activated. Add the rest of the flour in a bowl and then pour the yeast mixture, salt and oil. Stir until a sticky dough is formed.
Sprinkle some extra flour on a clean work surface and pour the sticky dough. Knead it for about 3-5 minutes, until the dough is smooth and elastic. Add more flour, as needed, to keep the dough from sticking to your hands, but try to use a little at a time.
Grease a clean bowl, set the dough inside, cover with plastic wrap, place in a warm place and let the dough aside until it has doubled its size ( about 1 h ).
Preheat the oven at 250 C or at the highest temperature your oven has. Before placing the pita breads inside, make sure the oven is fully preheated, otherwise they will not puff. Even pitas that don't puff are still delicious and can be used as wraps or torn into pieces for dipping in different sauces.
Divide the dough into 6 equal pieces and sprinkle them with some flour.
Using a floured rolling pin, shape the pieces into circles of about 15 cm wide and about 4-5 cm thick.
Place the rolled-out pitas on a tray covered with baking paper, place them in the oven and bake for about 2-3 minutes. After 1 minute, the pita will start to puff up and it's done when it has fully ballooned. Cover baked pitas with a clean, slightly moist dishtowel while cooking the remaining pitas.
TO BAKE PITAS ON THE STOVE: Warm a cast iron skillet over medium-high heat. Drizzle a little oil in the pan and wipe off the excess. Lay a rolled-out pita on the skillet and bake for 30 seconds, until you see bubbles starting to form. Flip and cook for 1-2 minutes on the other side, until large toasted spots appear on the underside. Flip again and cook another 1-2 minutes to toast the other side. The pita should start to puff up during this time; if it doesn't or if only small pockets form, try pressing the surface of the pita gently . Cover cooked pitas with a clean, slightly moist dishtowel while cooking the remaining pitas.
Enjoy!
