Naranga Achar is a lemon pickle recipe which is a gift from one of the most beautiful cuisines of India, Kerala. Made with lemon, spices and herbs in sesame oil, this achar is also an integral part of the celebrated ‘sadya’ meal during Onam. This recipe of mine is going to help you make it at home, in a simple way.

Ingredients : -
Lemon - 1 kg
Kashmiri chilly powder - 6 tbsp
Sesame oil (nallenna ) - 200 ml
Kayem podi - 1 tbsp
Salt to taste
Garlic - 1 cup
Ginger (grated) - 1 big piece
Garlic ginger paste - 1 tbsp
Mustard powder - 1 tsp
Fenugreek seeds powder - 1 tsp
Vinegar - 2 tbsp
Sugar - 1 tbsp
Green Chilly- 5
Method: -
First rinse 1 kg lemons very in water. Then, wipe them dry with a towel.Cut it into small pieces. Add the lime in a vessel and mix it with 1 tbsp kashmiri chilly, 1 tbsp salt and 1 tbsp kayapodi. Put the lemon in a munchatty and give steam for 10 mins.
Heat a big pan, and heat sesame oil.Add garlic, ginger and curry leaves.Saute it and switch off the flame...Add kashmiri chilly powder, mustard and fenugreek powder. Add the lemon from munchatty and switch on the flame. Add vinegar and mix well. Finally add sugar again mix well and switch off the flame....Lemon achar is ready.
