SAVORY CREAM CHEESE SPREAD (pg 93)
Soften 3oz of cream cheese with just enough milk to spread. Season to taste with salt, freshly ground pepper, paprika, lemon juice, and onion juice or mixed chives. Blend in 1/2tsp Worcestershire sauce and 2Tbsp chopped pimiento stuffed olives.

CHICKEN - WILD RICE CASSEROLE (pg 134)
2c cut up cooked chicken
1 1/2 to 2c cooked wild rice (I used a wild rice blend)
1/4c chopped green pepper
1 - 10 1/2oz can cream of mushroom soup
1/2 soup can of milk
salt and pepper

Heat oven to 350. Mix ingredients together; place in greased 2 quart baking dish. Bake 30 minutes.

WILTED GREENS (pg 147)
(lettuce, spinach, endive, or a combination)
4 slices bacon, cut up
1/4c vinegar
2Tbsp water
1qt greens
2 green onions, chopped (I used chopped chives)
1tsp salt
pepper
1 chopped hard cooked egg

Fry bacon until crisp, add vinegar and water. Heat. Combine greens, onion, and seasoning. Pour hot mixture over greens; toss until wilted. sprinkle egg over top.
