Ingredients
1 3/4 cups all purpose flour
2 1/2 tsp baking powder
1/2 Tsp Salt
1 1/4 cups granulated sugar
1/2 cup canola oil
2 large eggs
1 tbsp ube flavoring, I used Bakersfield ube flavorade
1 cup evaporated milk
1/2 cup ube halaya / purple yam
Bake in a preheated oven at 350°F for 20 to 25 minutes.
Cream Cheese Frosting
125 grams cream cheese
1/2 cup whippit, whipping cream.
2 tbsp cold milk
2 tsp ube flavoring
Yield : 20 Cupcakes, 3oz
Note: If you don't have purple yam available, just use two tablespoons of ube flavoring.
