With this delicious recipe of a fruit and dry fruit-based salad, the spicy dressing adds a zing to the salad. Feta cheese sits on the top.
FETA SALAD TARTS
Ingredients
Crumbled feta cheese as required
3 fresh figs
8-12 readymade tart shells
1 tbsp mustard paste
3 tbsps extra virgin olive oil
1½ tbsps lemon juice
¼ tsp honey
Crushed black peppercorns to taste
Salt to taste
10-15 rocket leaves, roughly torn
2-3 tbsps toasted and chopped walnuts
2-3 tbsps fresh pomegranate pearls
Method
1. Take mustard paste in a bowl. Add extra virgin olive oil, lemon juice, honey crushed black peppercorns and salt and mix well.
2. Cut figs into 8 parts.
3. Take rocket leaves in a bowl. Add figs, walnuts, pomegranate pearls and mix. Drizzle prepared dressing and mix well.
4. Arrange tarts moulds on a serving plate and add the prepared salad to the cups.
5. Sprinkle feta cheese and serve.
