1. Start by switching off the display by pressing the 'M' button for 2 seconds.
2. Then, hold the brake lever, the left side, the throttle, and the 'M' button all together for 8-9 seconds.
3. Now, let's test it out.

You can see that the pedal assist modes 1-5 are now unlocked, and you can go faster than the UK legal speed. Even if you check all the other pedal assist modes, the tire will be moving almost at the same speed.
