Today I am bringing you an easy recipe for rice pudding with coconut milk.

Serves 2-3
INGREDIENTS
1/2 cup rice
1 cup water
1/8 tsp salt
1 can coconut milk (400ml/13.5oz)
1 can evaporated milk (354ml / 12oz)
1/3 cup condensed milk (102g)
3 Tbsp sugar (You can use coconut sugar too)
1/2 tsp vanilla extract
1/4 tsp ground cinnamon
Crushed peanut
Shredded coconut
INSTRUCTIONS
-In a saucepan bring water to a boil.
-Stir in rice and add the salt.
-Cover and simmer over low medium heat, stirring often, until water is fully absorbed (10-15 minutes).
-In a separate container stir in the can of coconut milk, the can of evaporated milk, 1/3 cup condensed milk, 3 Tbsp sugar, ½ tsp vanilla, and ¼ tsp cinnamon (you should be getting close to 4 cups of liquid).
-Once the rice is cooked, add 2.5 cups of the milk mixture to the rice, and reserved the rest.
-Simmer and stir the rice often, until spoon is able to stand up in pudding.
-Serve warm or chilled. Add crushed peanuts, some shredded the coconut, and some of the milk reserved.
