Soaking your wood when you smoke meat is a huge myth that needs to go away. Wood heats up to approximately 212 oF (100 oC) evaporating the moisture in it. There is no heating from the wood at this point
Wood solids starts to break down converting the fuel gases (near 575 oF, 300 oC)
You don't raise to the combustion temperature until the steam is evaporated. So by soaking your wood you prolong the time it takes to get smoke from your wood and gain nothing from the water itself.
Stop soaking your wood.
