Blinchiki - Crepes
Ingredients:
• 1 cup flour
• 2 eggs
• 1 cup milk (or water for a parve option)
• Pinch of salt
• 2 tablespoons sugar
• 2 tablespoons oil
• 1 cup boiling water

Instructions:
1. In a mixing bowl, beat the eggs with a pinch of salt and the sugar.
2. Gradually add 1 cup of hot water while stirring, then add the cold milk. Stir until well combined.
3. Add the flour, mix, then the oil, and mix everything together until smooth and lump-free. If needed, pass the batter through a sifter to remove any lumps.
4. Heat a round non stick skillet over medium heat. Pour a small scoop of batter onto the pan, swirling to spread it thinly. Cook until golden on each side.
5. Place a paper towel (such as Bounty) inside a bowl and cover the stack of crepes to keep them soft and moist-free.
