A quick and easy recipe to make with bottle gourd and flax seeds. Healthy and yummy!
LAUKI AUR ALSI KI SABZI (Teesi Sajmain)
Ingredients
500 grams bottle gourd (lauki)
¼ cup flax seeds (alsi)
2-3 tbsps mustard oil
¼ tsp asafetida (hing)
¼ tsp turmeric powder
Salt to taste
2-3 tbsps chopped fresh coriander leaves
½ lemon
Fresh coriander sprig for garnish
Rotis for serving
Method
1. Peel the bottle gourd and cut into 1 inch cubes.
2. Dry roast the flax seeds till they pop, transfer on a plate and allow to cool.
3. Transfer roasted flax seeds in motor and finely pound it with the pestle.
4. Heat mustard oil in a kadai and let it smoke, reduce the heat, add asafetida, bottle gourd and sauté on a high heat for 2-3 minutes. Add salt and turmeric powder and mix well.
5. Cover with the lid and cook for 5-10 minutes.
6. Add 2-3 tbsps of powdered flax seeds, coriander leaves and mix well.
7. Switch off the heat, squeeze lemon and mix well.
8. Transfer into a serving bowl, garnish with coriander sprig and serve hot with rotis.
