Onam is always a nostalgic celebration for most of the Malayalalees/keralites around the world. The most important highlight of Onam celebration is Sadya which is made using more than 10 varieties of curries and atleast 1 variety of payasam. Different varieties of payasam is familiar to malayalees, but the best among them is Paal Payasam. Made using rice/payasam rice/broken Matta rice/unakkalari/Ada/Semiya etc, cooked in milk and sugar to perfection. Pressure cooker paal payasam can also be made. But Paal Payasam made in a traditional uruli in a traditional fire stove tastes the best, I bet.
