Ingredients for Methi Matar Malai:
(Tsp-Teaspoon; Tbsp-Tablespoon)
- Methi (Fenugreek Leaves) chopped- 100 gms
- Green Peas (Matar) - 150 gms
For the Masala Paste:
- Green cardamom-3
- Cloves-3-4
- Cinnamon- 1 small
- Cumin seeds- 1/2 tsp
- Onions sliced- 100 gms
- Ginger chopped -1” piece (8 gms)
- Garlic cloves- 5-6 (8 gms)
- Green chillies- 3-4
- Cashew nuts- 12
Spice Powders:
- Turmeric powder- 1/2 tsp
- Coriander Powder-1 tsp
Other Ingredients:
- Fresh Cream- 5-6 tbsp
- Salt- 3/4 tsp
- Ghee- 1 tbsp
- Oil- 2 tbsp
Preparation:
- Take a pan and add 1-2 tbsp oil.
- Now add the whole spices and give a stir.
- Add the sliced onions and fry on medium heat for 3 mins.
- Now add the chopped ginger and garlic cloves. Give a stir and fry on medium heat for another 2 mins.
- Lastly add the cashew nuts and green chillies and stir & fry on medium heat for another 1-2 mins.
- Remove from pan and allow it to cool.
- To blend, add this to the grinder and coarse grind it. Now add 1/2 cup water and blend it to a paste.
- Wash, clean and chop the methi leaves.
- Also shell the green peas and boil it for 3-4 mins with 1/4 tsp salt. Strain and set aside.
Process:
- Heat oil and ghee in a pan and add the masala paste. Give a stir and add the turmeric powder and 1/4 tsp salt.
- Now keep frying on medium heat for around 3 mins and then add the coriander powder.
- Lower heat and keep frying on low heat for another 3-4 mins till the masala is fried and oil separates.
- Now add the boiled green peas and mix & fry on medium heat for 3-4 mins.
- Now add the chopped methi and a pinch of salt. Mix and fry on low heat for 3-4 mins till cooked.
- Now add 150 ml water & cover and cook on low heat for around 5 mins till cooked.
- Now remove lid and add the fresh cream. Mix and simmer for 2-3 mins.
- Serve hot with roti or naan.
