Recipe:
3 tbs olive oil
6 cloves garlic (minced)
1 shallot (julienned)
1 lemon
Salt and pepper to taste
For the garnish-
Fresh Parsley
1 lemon wedge
Heat the oil in a large sauté pan over medium heat. Sauté the garlic and shallot just until begins to soften (about 30 seconds). Add the green beans, season with salt and pepper and sauté until they are almost cooked through. Zest half of the lemon over the beans and continue to cook for 30 more seconds. Adjust the salt and pepper then transfer to a serving bowl or platter. To finish squeeze over the lemon wedge and chop some of the parsley to sprinkle over.
