Ghobhi gajar shalgam ka khatta meetha achar(गोभी गाजर शलगम का खट्टा मीठा अचार)
ingredients
Gobhi 1kg,gajar1kg,shalgam1/2kg sarson ka oil,Rai(सरसों सीड्स),vinegar, gurh ,ratan jot(for colour)namak,kala namak,kali.mirch,kashmiri mirch,ginger and garlic
Recipe
Wash and cut vegetables .Boil them in water for 4-5 min,then drain off the water.Then dry these boiled vegetables in sunlight on clean cloth.
Make chashni with brown vinegar(3/4th glass and jaggery(according to taste).let it cool down
Heat sarson ka oil 150gm in karahi.Then add Ratan jot dry for colour and after 2 min of heating drain theses out(you.can skip this step). Grind ginger garlic (100-100 gm) which were washed and dried before 5-6 hours.Add this paste in oil cook till light brow Then add salt(according to.taste) ,black salt (2pinch),kashmiri or red chilly powder ,black pepper powder.Mix them well and switch off the flame.Let it cool down for 4-5 min then mix chashni of vinegar and jaggery and rai powder (black sarson seeds)in it.Mix all well.Tasty khatta meetha pickle os ready.
