This is an easy way to include pumpkin in your meal and flavour of the coconut makes it even tastier.
Recipe notes:
Suggested Rice Ratios:
- 1 cup LONG GRAIN rice to 2 cups liquid
- 1 cup PARBOILED rice to About 2 1/2 cups liquid
- 1 cup BASMATI rice to About 1 1/2 cup liquid
-The pumpkin can be grated, puree, cubed or diced.
- Sometimes I add ginger and a couple pimento grains for additional flavour
- Remember the coconut milk adds moisture so dont add too much water. Take note of the TOTAL liquid that your rice requires
