This BEST EVER Potato Salad with dill. It is easy, creamy, and loaded with veggies, and a secret ingredient in the dressing puts it over the top.
Potato salad is just one of the recipes that everyone loves. It’s easy to make ahead of time and can contain lots of different additions.
Ingredient:
• 800 g potatoes (boiled, peeled, and cut into bite-size chunks)
• 1 cup celery (thinly sliced)
• ½ cup radishes (thinly sliced)
• ½ cup fresh dill (finely chopped)
• 150 g cucumber pickles (finely chopped)
• ½ red onion (chopped)
Dressing:
• 100 g mayo
• 100 g tahini
• 20 g mustard
• 1 lemon
• 1 tsp salt
• pepper
Instruction:
1. Add potatoes to a large pot with cold water. Bring to a boil, then cook until fork tender, 20 to 30 minutes, depending on their size.
2. Drain and set aside until you can peel them.
3. Peel and chop them into bite-size chunks.
4. To a large bowl, add potatoes, chopped celery, thinly sliced radishes, chopped onion, chopped cucumber pickles and finely chopped fresh dill.
5. To a small bowl, add mayo, tahini, mustard, lemon juice, salt and pepper.
6. Whisk until well combined. Add water if needed.
7. Add dressing to potatoes bowl.
8. Toss until well combined. Taste and adjust for salt.
9. You can serve it immediately or let it chill for at least 1 hour for the best flavor and texture.
