Steak Chimichurri Sauce and Bone Marrow Brulee… Full Recipe below 👇🏼 😍

1. Soak bone marrow in cold salt water for 24hours
2. Finely chop -small bunch parsley, small bunch coriander, 2 garlic cloves, 3tbs white vinegar, 5 tbs olive oil and mix, use blender or pestle and mortar to desired consistency
3. Remove steak from fridge
4. Preheat fan oven to 200c and cook bone marrow for 15-25 mins depending on size.. when starts to bubble its done. Remove from oven let cool, cover with sugar and torch for a hard caramel top.cover with chimichurri
5. Preheat heavy bottom pan (hot) season steak well and cook steak for around 3 minutes each side or until till internal temp reaches 55-60c for a medium rare-medium steak. Baste with butter herbs and garlic on the last 3 minutes of cooking.
6. Let steak rest for same time as cooking
7. Slice against the grain, cover with sauce and dip into to bone marrow
