How to make Tomato Soup:
You’ll start by placing a large pot over medium-high heat and adding oil and onion. Sauté for the onion for 5-7 minutes, or just until softened, then, add in your garlic and sauté for about 1 minute more.
Add both kinds of tomatoes to the pot, along with the sugar, salt, pepper, broth, bay leaf, and thyme. Bring this mixture to a simmer, then reduce the heat to maintain the simmer and allow it to cook, uncovered for 20-25 minutes, stirring occasionally.
Once the mixture has reduced a little, remove the bay leaf, and then you’ll go in with your immersion blender and purée the ingredients until they are almost completely smooth.
Lastly, all you have to do is stir in the basil and cream and allow it all to simmer for about 10 minutes more. Now, serve it up and enjoy!
